- 1 pound (450 grams) skirt steak, sliced against the grain
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, crushed
- 1 medium (120 grams) green bell pepper, sliced
- 1 cup (90 grams) sweet peppers, sliced
- 2 cups (320 grams) cauliflower rice
- 1/2 cup (80 grams) cherry tomatoes, halved
- 4 large (180 grams) eggs, fried
- Salt and pepper, to taste
- Spray a cast iron skillet with cooking spray, then place the steak in the skillet to sear. Add in the olive oil and garlic, mixing it well with steak.
- Let the steak simmer on medium-high heat for about 10 minutes, then add in the peppers. Continue letting this simmer until the steak is well done.
- While the steak is simmering, prepare the rice if you have not already done so.
- Serve the steak, peppers, tomatoes and a fried egg over the cauliflower rice, then salt and pepper to taste.
